What’s better in the winter time than a bowl of warm, homemade chicken noodle soup? Nothing, absolutely nothing.

Today I’m sharing a homemade chicken noodle soup recipe that was given to me by an older lady that I used to work with. She always made this soup when we had potlucks at work and I fell in love with it! I actually never even liked chicken noodle soup before this recipe. Needless to say, that has definitely changed. With all that being said, let’s get cooking!!
Ingredients
2 Tablespoons Butter
1 Cup Chopped Onion
1 Cup Chopped Celery
2-3 Cups Diced Chicken
2 Cans Cream Of Chicken Soup
5 Cups Chicken Broth
1 Teaspoon Poultry Seasoning
2 Cups Frozen Peas and Carrots
1 1/2 Cups Heavy Cream or Half and Half
1 Box Noodles of Choice
Salt and Pepper To Taste
The first thing that needs to be done, that I neglected to take a picture of, is starting the pasta boiling. Now, you can use any pasta of your choosing, but I think bow tie pasta makes it taste just a little bit better. After the pasta is boiling, go ahead and dice the chicken. I’ve never measured the amount of chicken I use, it’s usually just use two boneless skinless chicken breasts. After those are chopped, add them to a pan with just a little bit of oil, salt, and pepper and cook through.

After the pasta is done cooking drain and set it aside.


While the chicken continues to cook dice the onion and celery. If you’re like me and couldn’t evenly dice vegetables if you were paid, throw it in a chopper and give yourself a pat on the back. I also don’t measure the amount of onion and celery I use. It usually ends up being one whole onion and a quarter to a half of a bunch of celery.

After the onion and celery are chopped, add them to a pot along with the butter and sauté until tender.

After the onion and celery are tender, add the chicken, chicken broth, cream of chicken soups, and poultry seasoning to the pot, bring to a boil, and reduce heat to medium low and simmer for 20 minutes.

Add in the frozen peas and carrots, cover, and simmer for 10 more minutes.

Stir in the cream and cooked noodles.

Add salt and pepper to taste and heat through.
